Lowes Foods Original Recipes - Crafted by Chef Joe


Perfect Sides:
Garlic Whipped Yukon Potatoes
2 1/2 lbs Yukon gold potatoes peeled
1 1/2 tsp Morton sea salt
1 tsp Lowes Foods ground black pepper
3 tbsp Lowes Foods butter cubed
4 ea cloves garlic chopped
1 c Lowes Foods heavy cream

Directions
1. Cook potatoes on a simmer until tender
2. Add butter and garlic to a small pot and melt together
3. Add half of the cream to the butter mixture and heat
4. Place potatoes in a bowl to whip. Add salt and pepper then warm cream mixture and whip
5. Use remaining cream to adjust to desired consistency

Honey Glazed Carrots

Serves 4-6

3-4 cups coin cut carrots
1/2 cup orange juice
1 tsp ground ginger
3 tbsp honey
1 tbsp butter
Pinch salt and pepper


Directions
1. Bring water to a boil. Add carrots and cook until almost fork tender
2. Drain water leaving carrots in the pot, add remaining ingredients
3. Bring juice to a boil then cook until liquid reduces and coats the carrots

Green Beans

Serves 4-6

Approx. ¾ lb green beans trimmed (fresh)
1 lemon
1 tbsp butter soft
1/4 tsp salt
¼ tsp pepper

Directions
1. Bring large pot of water to a boil and add 1 tbsp salt
2. Add green beans and simmer until tender
3. Drain water leaving beans in the pot
4. Add remaining ingredients and toss

Champagne Sage Balsamic Garden Salad and Dressing

1/2 bag mixed salad greens
2 ea boars head sliced prosciutto
1 cup cherry or grape tomatoes cut in half
1/4 cup dried cranberries
1 ea La Bonne Vie goat cheese (we used tomato basil)
1 1/2 cup croutons
1/8 cup  chives cut into .5 inch lengths

Dressing 

6 ea fresh sage leaf full circle
1/8 tsp Morton sea salt
1/8 tsp Lowes Foods ground black pepper
1tbsp local honey
3/4 tbsp World Classics Dijon mustard
1/4 cup  Champagne
1/4 cup balsamic vinegar
3/4 cup Lowes Foods pure olive oil

Directions
1. Combine all ingredients except oil in blender and turn blender on
2. While blender is running, slowly pour in oil to form dressing
3. Use as desired works great as a marinade for chicken or pork, dressing can also be made a day or two ahead of time

Pumpkin Pie

Ingredients

3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
1 can (12 fl. oz.) Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Whipped cream (optional)

Directions
1. Mix sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
2. Pour into pie shell.
3. Bake in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.
