VEGETABLE & RICE SOUP

YIELD: 4-6 servings
PREP TIME: 20 min
COOK TIME: approx. 45 min

INGREDIENTS:
3 ea. Medium carrots
3 ea. Celery stalks
1 ea. Medium sweet onion
1 tbsp. olive oil
2 ea. Garlic clove
½ C frozen yellow corn kernels
2 springs of fresh thyme
1 sprig Fresh Sage
1 ea. Bay leaf
¼ tsp Fine sea salt
¼ tsp Black pepper
32 floz Chicken broth (1 container)
32 floz Vegetable broth
½ bag Accents sprouted rice trio
Juice of half a lemon

METHOD:
1. Cut carrot, onion and celery into medium sized dices add to a large sauce pot with olive oil over high heat
2. Cook until onions become translucent then add remaining ingredients and bring to a boil for 2-3 min
3. Continue to cook until rice is done
NOTES:
- Adjust consistency with water if desired
- Make the next day and add pulled turkey leftovers
